This is an old family recipe. We cooked it without measuring ingredients so I had to stop and weigh and measure in order to post it! Not hot spicy, but a different and flavorful way to cook summer produce and it is even better the next day (if it lasts that long). In a large skillet, melt butter over medium-high heat.

  1. Heat the olive oil in a large, deep skillet with a tight fitting lid over medium heat. Once its hot, add the onion and peppers and stir them to coat in oil. Let them cook until they start to soften up a bit, then add the zucchini and yellow squash to the pan. Pop the lid on and let it cook fairly undisturbed for 3 or so minutes. Then add the seasonings and stir. Continue cooking until the squash is your desired tenderness (I usually cook mine for 10ish minutes). Then serve it up.

Stir in peas, salt, and pepper, and cook just until heated through. In a small bowl, combine the onion powder, garlic powder, smoked paprika, cayenne, salt and brown sugar. In a large mixing bowl, toss squash with butter and olive oil. Stir in garlic salt and pepper; sprinkle with cheese. In a small bowl, combine the bread crumbs and melted butter or margarine; sprinkle over the top of the tomato mixture.
